Pad See Ew (Thai Stir-Fried Noodles)

Pad See Ew is a popular Thai noodle dish known for its smoky flavor and balanced sweetness.
It combines wide rice noodles with chicken, egg, and broccoli stir-fried in soy sauce.
This version is easy to make at home and tastes just like what you’d find at a street food stall.
Ingredients
For the sauce:
- 1 tbsp dark soy sauce
- 2 tbsp light soy sauce
- 1 tbsp white sugar
- 1 tsp chili-garlic sauce (optional, for heat)
For the stir-fry:
- 1 tbsp olive oil
- 1 tbsp chopped garlic
- 6 oz chicken breast, sliced
- 2 cups broccoli (fresh or frozen)
- 1 lb fresh flat rice noodles
- 1 egg, beaten
- A pinch of sesame seeds
- A pinch of crushed red pepper flakes

- Wok or large frying pan
- Small saucepan
- Mixing bowl
- Spatula
- Knife and cutting board

Caution
Be careful when cooking over high heat.
The sauce can burn quickly, so stir continuously to prevent sticking.
Steps

Prepare the sauce.
Mix dark soy sauce, light soy sauce, sugar, and chili-garlic sauce in a small saucepan.
Heat for 3–5 minutes over medium heat until the sugar dissolves. Remove from heat and set aside. Heating the sauce helps combine flavors evenly. -
Heat the pan.
Add olive oil to a wok or large pan and place over medium-high heat. -
Cook the chicken.
Add chopped garlic and stir for 15 seconds until fragrant.
Then add the chicken and cook for 5–7 minutes, or until no longer pink. -
Add the broccoli.
Stir in the broccoli and cook for 2–3 minutes until tender and bright green. -
Add the noodles.
Separate the rice noodles and add them to the pan.
Toss everything together until evenly mixed. -
Add the sauce.
Pour the prepared sauce over the noodles and mix well.
Stir-fry for another 2–3 minutes until everything is coated and slightly caramelized.
Letting the sauce reduce a little helps create a rich, glossy texture. -
Scramble the egg.
Push the noodles to one side of the pan and pour the beaten egg into the empty space.
Scramble it until cooked through, then mix it with the rest of the ingredients. -
Serve.
Sprinkle sesame seeds and red pepper flakes on top.
