Warning
Warning
Hot oil can splatter and cause burns. Keep a safe distance, gently pour the egg mixture into the pan, and never leave the pan unattended.
Steps
-
Heat the oil in a small saucepan over medium-high heat until hot.
Hot oil makes the omelet puff and turn crispy instead of absorbing oil. -
Crack the eggs into a mixing bowl.
-
Add minced pork and soy sauce to the bowl.
-
Whisk vigorously until the eggs look foamy.
More air in the mixture creates a fluffier omelet. -
Pour the egg mixture into the center of the hot oil carefully and allow it to puff up.
-
Let it fry for about 30 seconds, checking the bottom for a golden color.
-
Flip the omelet once using a spatula and cook for another 30 seconds.
Avoid flipping repeatedly to keep the structure airy. -
Remove and drain excess oil, then place over steamed rice.
-
Serve immediately with tomato sauce on the side.
